Under’s striking architecture, created by the acclaimed Norwegian firm Snøhetta, blurs the boundaries between land and sea, allowing the restaurant to become part of its environment and even a habitat for marine life over time. Inside, the atmosphere is warm and welcoming, a gentle contrast to the ever-changing world outside.
The kitchen focuses on seasonal, locally sourced ingredients from Southern Norway, celebrating both land and sea in each tasting menu. Guided by respect for nature and sustainability, the culinary experience reflects the region’s pristine surroundings and the rhythms of the ocean that embrace the restaurant.
