One day is dedicated entirely to the Under experience – from arrival and anticipation, to descending beneath the surface and dining five and a half metres below sea level. Here, fine dining becomes storytelling, marine research becomes part of the menu, and the ocean itself becomes your dining room.
The following day invites deeper exploration of the surrounding landscape and food culture. Join Melanie on a guided snorkelling tour outside Under, where you learn about seaweed, marine life and the raw ingredients that shape the flavours on your plate.
Walk the longest coastal trail around Lindesnes Lighthouse, a dramatic three-hour hike along cliffs, rocks and open horizons. Bring a picnic from Jentan på Båly, known for local seafood and some of the best fish cakes in Norway.
In the evening, return to Lindesnes Havhotell for a relaxed dinner in the à la carte restaurant – where the same philosophy of local produce, craftsmanship and simplicity continues.
For a slower, creative break, join a ceramics workshop with Under’s resident artist Trond Skog at his studio in Lonebekken Kraftstasjon. Here, you create your own cups and plates in a setting that feels more like meditation than a course.
